Low Sugar Breakfast Recipe: Macadamia and Berry Breakfast Parfait

If you’re looking for a low sugar breakfast recipe, this Macadamia and Berry Breakfast Parfait might tick all of the boxes. This cafe-style creation includes berries, warming spices, protein rich Greek yoghurt and the new Low Sugar Granola from Brookfarm.

It is rich in antioxidants and nutrients. This parfait is an ideal breakfast, but could also be served as a nutritious dessert or supper snack.

COMPOTE INGREDIENTS

4 Cups mixed berries, fresh or frozen

2Tbsp Monkfruit sweetener (or preferred sweetener)

1 lemon – zest and juice (1Tbsl reserved)

1tsp vanilla essence

1 cinnamon stick

1-2 lemon myrtle leaves (optional)

3tsp arrowroot

1/4tsp ground ginger or 1 tsp fresh ginger

PARFAIT INGREDIENTS

1 Cup fresh berries

2 cups thick Greek yoghurt

120g Brookfarm Low Sugar Granola Macadamia & Raspberry

METHOD

  1. Combine all the compote ingredients in a saucepan, except for arrowroot, ginger and reserved lemon juice. Simmer for 5 minutes.
  2. Mix arrowroot with reserved juice and stir into berry mixture with ginger. Simmer for 2-3 minutes untilthickened. Removed from heat, discard solids, and cool.
  3. To assemble, layer fresh berries, a quarter of the compote and youghurt in each of four glasses; finish with a topping of Granola.
