Teff flour is made from the teeny, tiny teff grain – the smallest grain in the world! Teff flour is a gluten-free flour that is high in protein and fibre and contains more calcium than any other grain as well as essential amino acids, such as lysine. It is also the only grain to contain vitamin C.
Gluten free teff has an earthy, nutty flavour and is traditionally used in Ethiopia to make “injera”; a flat sour-like fermented pancake that is served with stew and/ or lentils.
Teff can also be used to make cookies (like the tasty recipe below), as well as bread and cakes.
Triple Chocolate Gluten Free Teff Cookies
Ingredients
- 200gms brown Teff flour
- 250gms peanut butter (chunky or smooth)
- 250gms coconut sugar
- 2 eggs
- 1 tbs dark cacao powder
- 50gms 70% dark chocolate, roughly chopped
- 50gms cacao nibs
Method
- Pre heat your oven to 175deg on fan bake and line a large baking tray with baking paper.
- In a large bowl, add in all of your ingredients and mix together to form a dough.
- Evenly portion out 20 balls and lay them spaciously on the lined baking tray.
- Press down lightly with the prongs of a fork to make a mark and flatten slightly, then bake in the oven for 15 mins.
- Leave 10 mins to cool and enjoy!
